Quickles by Joanna Quargnali-Linsley

Summer is all about adventures and being outside. These Quickles can be made so quickly, and yet pack such a punch of flavor and can be an addition to just about anything.

I love having people (and kids) help make these with whatever vegetables and herbs we have around, especially if we can do it with things we pick from the garden just for this purpose.

Quickles from The Seasonal Table: Summer
INGREDIENTS
1 small cucumber, sliced thin
2 carrots, sliced thin
½ onion, sliced thin
4 fronds of fresh dill, roughly chopped (about 2 tablespoons)
2 teaspoons sugar
2 teaspoons salt
½ cup apple cider vinegar

DIRECTIONS
Combine all of the ingredients in a container with a tight-fitting lid.

Shake the container. Let it sit for 15 minutes and repeat, 4–5 times.
